Instructions
  1. On separate cutting boards, cube meat and dice veggies. 
  2. In medium saute pan, sauté veggies till slightly translucent. 
  3. In large saute pan or Dutch oven, brown meat over medium heat in a little olive oil.
  4. Place browned meat and sauteed veggies in crock pot. Add Rotel tomatoes.
  5. Mix *gravy ingredients, seasonings, and tomato paste. Add to crock pot and mix well.
  6. Cook 7-8 hours on LOW.
Recipe Notes

Notes from the Chef: Often I sub canned chopped tomatoes and Hatch green chilies for Rotel. Serve over rice or on a tortilla (although over rice is less messy).  I top with a little queso and salad topper (shredded cabbage, cilantro, dash rice vinegar, salt, and Mexican oregano). Could make this recipe *gluten free. Simply choose a gluten free gravy mix or make your own.

Carne Asada              *CROCK POT RECIPE!

INGREDIENTS:carne asada bowl

2 lbs. Top Sirloin, cubed

1 large onion, chopped

4-5 cloves fresh garlic, minced

1 bell pepper

1 can mild ROTEL

1 can medium ROTEL

2 tsp cumin

2 T chili powder

2 T tomato paste

1 envelope *gravy mix plus 1 C water (mix first)


 

1) Cube meat. Dice veggies.  Sauté veggies till slightly translucent.  Brown meat.

2) Place meat and veggies in crock pot. Add Rotel tomatoes.

3) Mix *gravy ingredients, seasonings, and tomato paste. Add to crock pot and mix well.

4) Cook 7-8 hours on LOW.

Notes from the Chef: Serve with rice and tortillas.  I top with a little queso and salad topper (shredded cabbage, cilantro, dash rice vinegar, salt, and Mexican oregano). Could become a gluten free dish. Simply choose a gluten free gravy mix or make your own.
