My quick, go-to dessert when my family begs (politely) for something homemade: Mrs. Shannon’s (5-minute) Chocolate Chip Cookies

Ingredients
- 3/4 C brown sugar (or coconute palm sugar)
- 1/2 C Raw Sugar
- 1 C unsalted butter
- 2 eggs
- 2 tsp. vanilla
- 1 1/4 C whole wheat flour
- 1 1/4 C unbleached white flour
- 1 tsp. Salt
- 1 1/2 tsp. baking soda
- 1 bag bittersweet chocolate chips (10 oz.)
- 1 C pecans, chopped

Instructions
- Preheat oven to 350 degrees.
- In large mixing bowl, add and cream wet ingredients until well mixed.
- Gradually stir in dry ingredients.
- Add chocolate chips and pecans. Mix well.
- Place 1-inch balls on cookie sheet and bake for 10-12 minutes.
- I like to portion remaining dough on a cookie sheet, cover with plastic, and freeze. Then we have oven-ready cookies to bake on demand on a future day! Fresh, homemade cookies to serve HOT. Make only what your crowd will (or should) eat in one setting. Save the rest to serve later!

Note: One evening after returning home from a family vacation, my family expressed their “need” for cookies.
I agreed, “I will make my 5-minute cookies.”
To make it official, Daddy set the timer. My kids fetched the ingredients. I measured. They poured. And with the help of my dear friend, Mr. Mixer . . . Voila! Five-minute cookies were oven-ready.
