Instructions
  1. In mini food processor or mortar & pestle, add whole spices (cumin seed, coriander seed, whole cloves, and whole peppercorns). Process until medium fine in texture.
  2. Crush whole bay leaves between your fingers. Sprinkle into ground whole spices. Process until medium fine in texture.
  3. Add remaining spices (cinnamon, oregano, thyme, garlic powder, sea salt, and Ancho chile). Process together until even in texture.
  4. Store in empty medium-large spice container that will hold at least 1 C if making one batch of Chorizo seasoning.

How do I use this seasoning? I adapted Spicie Foodie's pork Chorizo recipe to make Homemade Chorizo Salmon Sausage. It's my family's favorite style of salmon sausage.

I find cooking in bulk way easier and economical, so typically I used to multiply Spicie Foodie's recipe of Chorizo seasoning x6. But that's a looot of math for this #homeschool mom when I'm trying to get 'er done in the kitchen. That's why I wanted to enter this recipe here in My Recipes--it has a units converter which makes it easy to adapt the quantity of a recipe instantly!

The base amount of this recipe will yield the following quantities, depending on how you adjust the total Servings:

Warning: look at the total Servings this recipe will yield BEFORE you dump spices into your food processor. Remember 1 C = 4x Spicie Foodie's original recipe. Adjust accordingly!

After I make this Chorizo seasoning, I store it in an empty medium to large spice container. When making Chorizo salmon sausage for my family, typically I add 2T of this seasoning mix to 1 lb ground salmon. It's the right balance of flavor and spicyfor my family. We found 3T to be a wee bit too caliente.

Your taste may differ as well. If 2T Chorizo seasoning/1 lb ground salmon is too spicy for you, simply reduce the quantity of Chorizo seasoning until your tastebuds feel happy!
