Ingredients
- 4 T unsalted butter, melted
- 3 T honey
- 1 1/2 tsp Salt
- 1/2 tsp ground cinnamon
- 1/4 tsp groung nutmeg
- 1/4 tsp black pepper
- 2 lbs. small carrots, trimmed
- 1 T thinly sliced fresh chives

Instructions
- Preheat oven to 400 degrees.
- In a small bowl, stir together the first seven ingredients. Reserve 2 T of the mixture.
- Rinse and trim carrots. Place in mixing bowl. Top with spiced honey butter mixture. Toss well.
- Spread carrots in a single layer on two baking sheets. Or place in 9x13 casserole dish. Bake in preheated oven for 30 minutes. Meanwhile, chop chives.
- Top with reserved 2T of spiced honey butter mixture. Transfer to serving platter. Sprinkle with chives.
Recipe Notes
I served this as a side for our Southern Christmas Dinner. Easy!!! Tasty. Reheats well.
I mixed up the honey spiced mixture in a glass dish the day before I baked this dish. Prior to baking it, I warmed it in the microwave to melt the butter, stirred it, then poured the mixture over my carrots.
